I work with our NHS students. They are required to perform service in three areas: for our school, for their church, and for the community at large. I need to track each of the three areas and a combined total.
Tracking three different types of activities is already possible. When configuring the hour log (what volunteers will see when they want to submit hours) in the Organizer Dashboard >> Settings. You can add several different activity fields and these will be what your volunteers can choose from when submitting hours. Later you can see all the hours they have submitted total as well as running reports for volunteers on only one activity category. These can be sorted out in the Reports tab of the Organizer Dashboard.
